6" Skinning Knife 

Handle is made from Fibrox which is strong enough to withstand the toughest of treatment while giving the grip a comfy and slip free feel. Fibrox is specifically engineered for the Food Industry.
Our Hollow Ground blades are produced by using a wheel to sharpen the edges of the knife until a convex hollow is removed from both sides of the edge. This type of grind produces a very sharp edge and is the best slicer because of its thinner profile.

“MEFE” knives are made to the highest possible standards to achieve the best quality and longevity available. Blades are made from High Carbon Stainless Steel 420J2 which is heat treated and annealed to obtain a hardness of 50-60 Rockwell. This hardness is tough enough to hold its sharp edge, yet remains soft enough to enable sharpening.

    Quality Knife

    I used a couple of their knives and they were pretty good in the kill floor. Very hard steel similar to the F. DICK KNIVES but they were relatively thick. Pretty cheap too. Not sure what anyone else thinks about them as I didn't know many people who used them.

    The order arrives on time. The knives feel great in the hand, well balanced and the blade feels very sharp on a good steel.

    I'm only new to this knife and I'm new to being a knife hand (8 months), but it stays sharp on the lamb. I'm mostly cutting through thick wool all day and I haven't had trouble with it. Very good price, I do plan to buy more in the near future. Only downside is Mitchell don't do shorter knives, 5"-5 1/2" would be suitable for a few jobs. Most people I work with like this knife.

    Bought this knife to test and I can guarantee that these knifes are better than Victorinox. This is the second time I've bought from Mitchell and they are nothing but tops, Best quality money can buy and I use knives daily
