Available with a range of abrasive grit sizes for different knife applications
Suitable for knife manufacturers, food processors, and resharpening services
Operation:
The machine operates using the Spiral Interlock Grinding Wheel system, widely used in knife manufacture and commercial resharpening. When combined with Cubic Boron Nitride (CBN) abrasive, this system delivers controlled sharpening geometry and consistently high levels of sharpness.
By selecting a sharpening angle—typically 30°—the edge angle is mechanically controlled by the interlocking spiral wheels. Once set, all operators achieve the same results regardless of experience. By adjusting the wheel geometry so the wheels do not interlock, hollow grinding can also be performed to establish the desired edge thickness prior to sharpening.
Abrasive Wheel Life (guide only)
When worn, grinding wheels can be returned to MEFE for recoating, helping keep consumable costs low. Expected performance varies depending on knife type and application:
12,000–30,000 new, unsharpened knives (size dependent)
Over 30,000 thin knives in food factory processing systems
18,000 knives with occasional hollow grinding in food factories
7,000 knives in mobile re-sharpening services
4,000 knives used for hollow grinding only
Available CBN Abrasive Grades
Different grades of abrasive are available which allow knives to be sharpened for different applications.
CBN 76 - Very smooth Fish and meat filleting
CBN 107 - Smooth General fish and meat processing
CBN 126 - Medium Vegetable and general kitchen use
CBN 151 - Coarse High-speed sharpening and non-food industrial use
Performance and Edge Life
Extensive testing using ISO sharpness testers shows that MEFE machines consistently achieve extremely high sharpness levels with excellent edge life. The cool‑running CBN abrasive prevents overheating of the cutting edge, avoiding softening at the tip—an issue commonly associated with conventional abrasive systems.
For most applications, a sharpening angle of 30° provides an optimal balance between sharpness and edge durability. Sharpening at 20° can increase sharpness further but may reduce edge life and increase the risk of damage.
Although the CBN abrasive is very fast and efficient, the knives do not become overheated during sharpening and so the use of a coolant is not required. This makes the machine pleasant to use and eliminates the use of a water bath, which quickly becomes a bacteriological hazard.
Design and Applications
The machine does not require coolant, making it cleaner and more hygienic to operate while eliminating water baths that can become bacteriological hazards.
Stainless steel covers, along with a water‑resistant motor and switches, make the unit suitable for food processing environments. Optional fast or slow motor configurations allow professional sharpeners to work efficiently while providing greater control for casual users.
The V‑100 is easily transportable and suitable for both in‑house and mobile operations. When installed in a service vehicle, it can be powered by a petrol generator or a 12V inverter connected to the vehicle battery.
